delicious spinach and mushroom lasagna, topped with a creamy alfredo sauce and its all vegan of course! served this to my family for dinner a few nights ago, with a side of vegan garlic bread, and they all absolutely loved it! anyone want the recipe?

So this was my afternoon…a boatload of lasagna! 3 boxes of noodles, 3½ jars of sauce, 12 eggs, 2 eggplants (for keto substitute noodles), 6 oz combined Asiago, Parmigiano and Romano, 6 lbs low moisture mozzarella, 1½ lbs cremini, 3 bags of spinach and 7 lbs of ricotta…accept no substitute.

I kept a food diary for a week to try to figure out why I had such an awful fucking stomach ache lol. The ache passed before I reached a conclusion, but I then decided to draw all that I’d eaten! It was loads of fun, I haven’t ever really drawn food like this before.
