Healthy sprouts in six days.
March 14th 2017

Bringing healthy food to the table, especially for the growing children, has never been this easy. We soak the seeds the first day for 24 hours. Then every morning and evening we fill the jars with water to do a shake and rinse. So, simply fill the jars, shake and pour the water out. once you’ve shaken the water out of the jars simply lay the jars on their side next to the sink. Keep them close and convenient. In six days you’ll have jars full of clean and organic sprouts for salads and sides. The nutritional value is exponentially higher when the beans open and the taproot grows. This is a great solution for anybody who feels they are too busy to grow their own healthy foods. With simple old-school methods no one has excuses and there is no light required. Moreover, the sweet and crunchy experience usually wins over the children.

From our experience, if you have an active lifestyle and need easily digestible foods that translate into quick and clean energy, this is definitely a route for you guys to explore.

Our Rabbit liver patê.

It’s rewarding to open the refrigerator and see the rabbit liver pâté setting up in the jars. There is a lot of love, time, effort, and last but not least nutrition that goes into those jars. Our rabbitry is now seasoned, being in production now and going on five years. We have one Buck and three Does. We harvest four times per year. We normally harvest between 8 and 18 rabbits per quarter with exception to winter time. In winter we harvest about 6 to 9. This gives time for the rabbits to relax and recharge. It’s also easier on us not having to take care of so many rabbits during freezing conditions.

This post focuses on some of the “weights and measures” of the rabbit liver pâté we made from yesterday’s 8 rabbit harvest. This always happens one or two days after harvest. Once the rabbit livers are cleaned and trimmed out we let them relax in the refrigerator overnight. This allows the water to evaporate away and leave the livers clean with a beautiful deep red color. We put them in a bowl, weigh them out and get started using our recipe. You can find a link to our recipe below.

Weights and measurements:

8 rabbits / organic feed&veggies / 3 months old

Genetics: select propagation of the New Zealand and Flemish breed.


- 8 rabbits procured 11.25 ounces of fresh rabbit liver. (1.2-2oz per rabbit)

- We made 16 ounces of Pâté that were divided into 4 ounce jars.

- So it took us 2 rabbits per 4oz jar.

- Following our recipe our Pâté contains 2.8oz rabbit liver 1.2oz of other ingredients (butter, cream, dry sherry, onion, garlic, parsley, thyme, ginger paste, Salt, pepper)

I would like to provide you with data on how much and what type of food it took to get the rabbits to harvest. I could provide estimations but I promise on our next harvest I will detail the food intake of the rabbits for the duration of their birth to harvest.

Today I taught boiling + herb id class. For which I designed 4 stations to make different Pestos ( Basil, Kale , Spinach, nut + seed free), some of which was harvested in our greenhouse then i tasked them with also making perfectly al dente pasta - whole wheat, lentil and brown rice pasta (some adults can’t do this!), then garnish with items like heirloom tomatoes, cherry tomatoes and pepitas (pumpkin seeds) for our fall touch.

30 students, 45 minutes, 4 perfect pastas and Pestos. My greatest joy is them being so pleased and blown away with the flavors they can quickly and naturally create.

I also set up a pantry on my cart and ask them to “shop” for the correct items they need. 30 students now know they can make this dish start to finish on their own! Happy Monday and October my heart is always full doing this work!!

One of my staple fave big breakfasts. Booked organic cage free spiced eggs (turmeric paprika black pepper sea salt). @hempsworthfarm cast iron mini heirloom tomatoes w/ lots of garlic + parsley. Sautéed spinach and a truffled avocado toast on sprouted 12 grain. Paired w/ a big green juice (kale, spinach, chorella, cucumber, chard, Ginger, lemon).

Baba Ganoush. Smokey Charred Eggplant Dip. Today’s dish for 200 @fortunesociety . Like the cousin of Hummus, I gave Harlem one of my favorites variations and use of eggplant.

Charred eggplant is blended with EVOO,
Garlic, lemon, cumin, sea salt, paprika, Greek yogurt, crushed red pepper and I like to add some fresh herbs like mint + grilled lemons.

For many it was their first time having this dish and I’m glad they enjoy it as much as I do. .

My favorite vegan GF banana pancakes. (Serves 2)

Ingredients:
1 cup of oat flour
2/3 cups of plant milk
1 banana
1 tsp baking powder
1 tsp of cinnamon

I usually just add all the ingredients into a blender but you could also mashed the banana and mix all your ingredients in a bowl.
Then just cook like you would regular pancakes. Add all your favorite toppings and enjoy. ✨

Hace 10 años cuando empecé a hacer smoothies este era uno de mis combos favoritos y hacia mil que no lo hacia.
El ingrediente principal de este smoothie probablemente te haga pensar “vaya p*to asco” pero os prometo que esta buenísimo y que vale la pena probarlo

Ingredientes: ½ plátano congelado, ½ taza de remolacha cocida (si, remolacha, get those veggies in ) 1 taza de leche vegetal, 1 scoop de proteína vegana de chocolate (opcional), 1 cucharada de cacao en polvo, hielo.

El sirope de chocolate es : 1 cucharadita de aceite de coco y una onza de chocolate negro 85% derretido. Ps: cuando hace contacto con el frío se pone duro y es como un magic shell healthy ✨

Y aquí os dejo algunos de lo beneficios de las remolachas:

* Ayuda a bajar la presión arterial alta
* Contiene óxido nítrico que ayuda a reducir el impacto del ejercicio en el cuerpo, mejorando la resistencia a los de alta intensidad.
