What do you consider the pillars of your diet? Like not what you consider the most delicious, or even necessarily your “favorite” food, but the food that if you look within your heart and are honest with yourself actually eat more often than anything else? I think mine is toast, broccoli, and eggs
My family does one-pan baked ruebens, so that we get the right consistency every time, and feeds more than one person, or makes leftovers that require a little less assembly than a sandwich normally would.
Tools:
- loaf pan
- can opener
- butter knife
- serving spoon or fork
Ingredients:
- rye bread
- canned corn beef (the one that comes in the square tin)
- can of sauerkraut
- swiss cheese
- thousand island dressing (or, in my case, mayo)
You just open the can of corned beef (which, admittedly, can be a struggle- if you have arthritis or low coordination in the hands, help may be needed), slice until you have enough to layer in your loaf pan.
Open your sauerkraut and drain the liquid, and spread that on top.
Top the loaf with swiss cheese, and bake until meat is warmed and swiss cheese is bubbly (I think I usually do 20 minutes at 375).
Slap two pieces of rye on your plate, and scoop up a couple of slabs of the bake and put it on.
Top with dressing, if desired- personally, I’m not a fan of thousand island, and I know I won’t use it on anything else- so I just use mayo, and never really miss the thousand island ¯\_(ツ)_/¯
This version is a little cheaper than buying deli sliced corned beef or a real side of brisket for corned beef, is easy, and filling :)
