HOME-MADE “REAL” OYSTER SAUCE: omg it is the most delicious thing I have ever eaten. And it made me wonder, what the hell they put inside commercial oyster sauce to sell it so cheaply!!! - I got 2.4kg of frozen Japanese oysters from Hiroshima, where the sea very clean without much heavy metal contamination. You cook them for a few hours until the water is reduced to a third, then remove oysters and simmer the “oyster water” until it gets sticky like this! Took me 8 hours to get to this level. At the end I just added some sugar (if you don’t like sugar, you can use sweetener or nothing) and organic tamari sauce (yeah yeah, if you don’t like soy, use coconut amino but soy sauce does NOT contain so-called soy estrogen so no need to go crazy ). - The oyster sauce is traditionally a by-product of making dried oysters. But I just blended them and made oyster chowder for Noa. Absolutely nothing to be wasted! - At the end I got around 360ml of oyster essence. So one tablespoon of this sauce costs around 2 USD!!! But wow it is worth it. It is orgasmic. This much oyster in total contains around 2g of zinc. Not sure how much got out in the water but even if the yield is 50%, one teaspoon of this contains 14mg of zinc. The RDA for zinc in the US is 8mg for women, 11mg for men. Today I licked probably a teaspoon Noa found it extremely delicious and just wanted to eat more. I have never seen him like this!!!
