Sometimes (and i really do mean sometimes…) I am not that hungry for dinner but have a busy evening ahead of me so know I need to eat something quick and hassle free. This is where my sweet potato fries come in handy. Paired with a rocket and toasted pine nut salad and some humous topped with olive oil and cracked black pepper, and you really can’t go wrong.
