I’ve played 10 hours in Elden Ring and have accidentally killed every merchant but the first one
I’m pretty sure if you go to the church of vows and seek absolution (there’s a specific item for this I don’t remember what) you can revive them.
Giving the ball bearings they drop to the twin maidens in round table will also work to get their items, but in case you just miss the merchants and want them back, you can try the church of vows.
