The struggles has been real, y’all!

After about five attempts I finally was able to make these beautiful soufflé pancakes (Japanese-style pancakes). I was so happy with how they turned out, they were fluffy and light and just absolutely delicious. I’m glad I finally figured out the best recipe because I was about to turn into a pancake. LoL.

I used this recipe with a few alterations (I added salt, lemon zest for flavoring and a little bit of lemon to help beat the egg whites) https://www.justonecookbook.com/souffle-pancake/
