This was one of my favorite things that I made while visiting my family in the states.  They’re raspberry coconut macaroons, again from Smitten Kitchen!

These were AMAZING!  They were especially fabulous when they were still warm out of the oven, as is true of most cookies.  I kept the rest in a tupperware for the next couple of days and ate them gradually, but they actually got a little goopy, although still delicious.  Definitely not dry like macaroons can be!  I agree with the original recipe, that keeping some of the white and pink parts of the mixture separate tastes even better (as in the cookies on the bottom right of my photo).  Basically, I have absolutely no changes to make to this fabulous recipe and I can’t wait to make it again!  The Costco in Amagasaki usually has raspberries year-round, so I’m going to try to head out there again soon just for these!
