After working away for 5 hours, my boyfriend @michaelgarb did his family proud, and I did my ancestors proud – we made vegan pierogi entirely from scratch, including the dough.
We filled half with potatoes and caramelized onions, and the other half with raw garlic sauerkraut, porcini, and chanterelles. As toppings, I fried up some vegan ground beef with fennel, fresh thyme, fresh sage, and caramelized onions, accompanied by fresh dill and buraki (Polish shredded beets).
