Poached Eggs with Frozen Peas, Spinach and kale
1 Tbs coconut oil
½ Cup frozen peas
2 Cups fresh baby spinach
1 Cup of kale
Sea salt, to taste
2 Eggs
Directions
- Poach 2 eggs.
-Heat oil over medium heat in a saucepan. Toss through frozen peas and spinach until peas are thawed.
-Serve veggies in a bowl, topped with poached eggs.
