Considering they’re plants, the cheerful fuck-you energy of hot peppers that sting your eyes like onions when you cut into them remains (a) absolutely unparalleled and (b) something I would occasionally like to emulate
The downside to never measuring anything is that I end up with weird leftovers, eg the extra spanakopitakia filling that I simply could not manage to fit into the phyllo. The upside is that I end up looking at those leftovers and deciding I can mix them with also-leftover ricotta to have some sort of bastardized khachapuri for breakfast
