Vegan Lemon Larabars
I’m a star.

OK people, let’s get in formation.
Dates. Cashews. Almonds. Lemon Juice. Lemon Zest.
- ½ cup almonds
- ¾ cup cashews
- 1¼ cup packed dates, pitted
- 2 tbsp fresh lemon juice
- 1 tsp fresh grated lemon zest
- Place the nuts in a food processor or high-powered blender and process until broken down.
- Add dates, lemon and sea salt and continue blending until it forms a dough.
- Remove from blender and press into a pan lined with wax paper. Alternatively, simply roll the dough into balls.
- Place in the fridge for 1-2 hours.
- Cut into bars and either wrap individually or place in an air-tight container.
- Store in the fridge.
