Vegan Lemon Larabars

I’m a star.

If you mix it right, I might take you to get vegan coffee. 

OK people, let’s get in formation.

Dates. Cashews. Almonds. Lemon Juice. Lemon Zest. 

  • ½ cup almonds
  • ¾ cup cashews
  • 1¼ cup packed dates, pitted
  • 2 tbsp fresh lemon juice
  • 1 tsp fresh grated lemon zest
  1. Place the nuts in a food processor or high-powered blender and process until broken down.
  2. Add dates, lemon and sea salt and continue blending until it forms a dough.
  3. Remove from blender and press into a pan lined with wax paper. Alternatively, simply roll the dough into balls.
  4. Place in the fridge for 1-2 hours.
  5. Cut into bars and either wrap individually or place in an air-tight container.
  6. Store in the fridge.
