Dooku is already one of the greatest duelists among the ranks of Jedi knights, and for that reason Jo rarely agrees to a match. She does, however, know his style inside and out, and because of this, she is almost always able to force a draw (worse than losing in Dooku’s mind). And for that reason, Dooku almost never challenges her!

I headcanon Jocasta using Form VI, simply because it’s been described as the style designed by diplomats, for diplomats. But I also think she didn’t start out focusing on Form VI, I think she picked Form III initially, mastered it right away, and was completely untouchable. This was particularly frustrating for Dooku, because she was the only padawan in his age group he couldn’t beat consistently. Yoda believes her skills of deflection and redirection were a perfect foil for Dooku, and helped shape the duelist he became. Ambition and scholarly interest led her to make the change to Form VI later, and her master-level ability to multitask meant the blend of saber techniques and force abilities was a perfect fit for her. That said, few enemies of the Republic have seen her blade. Any padawan making too much noise in the archives will tell you, Madame Nu could scold a member of the Pyke family or a Hutt crime lord and leave them with their head hanging.
