I’ve made some super fluffy pancakes with masa harina this morning and I think those are quickly becoming my favorite pancakes. The idea for those was actually on the flour package and I’m glad I tried it. Have a relaxed Sunday guys!

Guess what? It’s #pancakesunday! It’s such a foggy typical November morning that fluffy pancakes were just the right thing to make.
They’re made with “masa harina” - that special corn flour that is used to make arepas or pupusas. It tastes really good in sweet pancakes as well!

Those pancakes were some of the fluffiest (is that even a word? ) I’ve had in a while. Probably it was the mixture of gluten free flour and buckwheat? I’ll have to try that again!
