Excuse my ugly countertops, but I’m quite proud of tonight’s dinner. Reading “Salt, Fat, Acid, Heat” this weekend inspired me to do my own twist on a salad I ordered for lunch the other week. Mine is spinach, chickpeas, wild rice, roasted eggplant, crumbled goat cheese, pan-fried chicken in a lemon and pepper marinade, and homemade balsamic vinaigrette.
