Excuse my ugly countertops, but I’m quite proud of tonight’s dinner. Reading “Salt, Fat, Acid, Heat” this weekend inspired me to do my own twist on a salad I ordered for lunch the other week. Meet my pride and joy, my hypoestes Archimedes. He was pale and sickly when we found him at a Home Depot, and proceeded to get stretched out and leggy on the shelf near my bedroom window, so I repotted him and moved him to a south facing window in our living room.
