#brownies
This time we have a yummy treat with a zesty twist! I made a large amount of them as I was with friends, but it is an easy recipe to halve.
Ingredients:
400g plain chocolate, broken into pieces
400g dark muscovado sugar
350g butter, plus extra for greasing the tins
6 eggs, separated
280g plain flour
2 tsp vanilla extract
zest 2 oranges
Method:
Firstly you need to heat your oven to 180c/ fan 160c/ gas mark 4. Butter and line 2 23x23cm tins.
Now, separate your yolks and whites.
Now, chop up the butter and add it to a large pan along with the sugar and chocolate.
Heat gently and stir for about 5 mins, or until the butter and chocolate have melted. Leave to cool for 10 mins. Then beat in the egg yolks, flour, vanilla, and half the orange zest.
Put the egg whites into a large, clean bowl and whisk until they stand up in peaks.
Stir ¼ of the whites into the mix to loosen it and then fold the rest in with a metal spoon.
When combined, pour the mix in the tins.
Bake for 25 mins or until risen and firm to the touch. Cool in the tin, then cut into squares.
Tip: They can be frozen for up to a month!
If you fancy making a frosting to go on top, beat together 400g cream cheese, 1 tsp vanilla extract, and 100g icing sugar with the remaining zest.
Spread over the brownies and serve!
