THIS is my latest creation: Grilled Buratta Caprese. Only to be made at the height of tomato season! Fresh, vine-ripe tomato sliced, tossed with oil, balsamic vinegar, salt and pepper, grilled (or pan seared) on high heat no more than two minutes a side, finish with a sprinkle of truffle salt (optional but recommended) and topped with fresh buratta cheese and a drizzle of high quality, fruity olive oil and fresh basil chiffonnade.
