So this was my afternoon…a boatload of lasagna! 3 boxes of noodles, 3½ jars of sauce, 12 eggs, 2 eggplants (for keto substitute noodles), 6 oz combined Asiago, Parmigiano and Romano, 6 lbs low moisture mozzarella, 1½ lbs cremini, 3 bags of spinach and 7 lbs of ricotta…accept no substitute.

I don’t know what to call this pie! It has Pesto alla Trapanese (I may be spelling that wrong, but it’s a fresh tomato and herb pesto made with fresh herbs from my garden) fresh buffalo mozzarella, cremini mushrooms and buratta (I had some leftover from the salad). It was delicious!!!

THIS is my latest creation: Grilled Buratta Caprese. Only to be made at the height of tomato season! Fresh, vine-ripe tomato sliced, tossed with oil, balsamic vinegar, salt and pepper, grilled (or pan seared) on high heat no more than two minutes a side, finish with a sprinkle of truffle salt (optional but recommended) and topped with fresh buratta cheese and a drizzle of high quality, fruity olive oil and fresh basil chiffonnade.
