#cooking for one

LIVE

oh shit guys

don’t have a nut milk bag or strainer? low on time? don’t have $$$$$ for raw nuts?

add a tablespoon or so of your creamy natural nut butter of choice to some filtered water in a good blender. blend until frothy. adjust as needed to desired thicc.

life = changed

I can’t take full credit on this one. My spouse had a pretty brilliant idea last week.

If you’re trying to reduce your plastic waste, or just prefer to use canned veg, here’s a fast meal trick: Buy a condensed soup, and add a canned veggie WITH the water it was packed in when re-constituting it. Even if it’s packed in salt, it’ll be minimal anyway. All those nutrients you’d typically be pouring down the drain when you drain off your veg? Now in your soup. Plus, you’re bulking up what’s probably a plain soup anyway.

Here’s some good combos off the top of my head:

* Chicken Noodle + Peas & Corn
* Beef Noodle/Beef Consomme + Green Beans
* Cream of (ANY) soup + Mixed Veg + White Beans (definitely rinse these though)
* Minestrone + Succotash
* Tomato Soup + Potatoes (It actually works, trust me) /Zuccini

You can, of course, always do what I do to bulk it up further by adding rice. But that’s another post, I think.

Try some of your own combos and reply back with your favorites!
