eva marie saint’s apple pie
i was about to make jimmy stewart’s apple pie but i was out once it mentioned shredded cheese.
- 4 small green apples
- 1 cup (240 milliliters) cold water
- 3 tablespoons (45 millileters) fresh lemon juice
- 1 cup (140 grams) all purpose flour
- ½ cup (1 stick) diced butter, room temperature
- 1 cup (190 grams) sugar
- 2 teaspoons (8 grams) ground cinnamon
step one: preheat the oven to 350 degrees fahrenheit (180 degrees celsius). peel, quarter, and seed four apples before slicing thinly.
step two: grease a 9 inch (23 centimeter) glass pie dish with butter. put the apples in a bowl with the water and lemon juice, let sit for ten minutes.
step three: put flour and butter in a bowl and mash with fork until clumps form (in my case, i used a pastry cutter because i have the tools). add sugar and use fork (or pastry cutter) to work it in.
step four: add one and a half cups of dough into the pie dish and press evenly to the bottom and halfway up the sides of the dish. drain the apples and arrange evenly on top of the dough. sprinkle with cinnamon and the remaining pie dough.
step five: bake for one hour or until the crust is brown and the apples are tender. cool for thirty minutes.
my thoughts: i liked the filling and i love shortbread so the crust was amazing. it was really simple and easy, i’d recommend it for the upcoming holiday season.
