Ginger carrot tofu soup! I think I stole / adapted this recipe from my vitamix book years ago. Put carrots, tofu, onion, garlic, a piece of ginger, cumin, and salt in a high speed blender with a little water and blend until it’s hot. I added steamed vegetables and chopped jalapeño to mine. I made a second batch because my brother ate the first one.
