Vegan Quinoa Burgers

Ingredients

  • ½ cup of rinsed Quinoa
  • 1 cup millet flour
  • 2 tbs coconut oil (olive oil is cool too, according to us)
  • 3 cups of organic kale, remove stems, finely chopped
  • ½ bell pepper (red or orange), seeds removed and minced
  • 2 stalks of celery, minced
  • 1 tbsp of cumin
  • Salt to taste
  • ½ tsp. ground pepper

Directions:

  1. Bring quinoa and water to a boil, then reduce heat to simmer, with the lid on until cooked (approx. 15 minutes).
  2. In a frying pan, heat ½ of the oil, add the kale, bell pepper and celery, cook for 2 minutes and then add the cumin.
  3. Take the quinoa and add in a sprinkle of cumin and pepper.
  4. Add the quinoa to the frying pan, and adjust seasonings (salt, red hot crushed chili pepper for a kick).
  5. Turn off the heat, place contents into a mixing bowl and add the flour to the veggie quinoa mix – stir well until everything is coated – set aside
  6. Clean the frying pan while the mixture cools down.
  7. Then, heat the pan on high and add the rest of the oil.
  8. Make patties from the mixture in the bowl.
  9. Cook each burger on both sides until brown and crispy.
