We Stalked Blu Skillet Ironware

Location: Seattle, WA

On his recent travels to the Pacific Northwest, Chopt Founder Tony Shure was determined to track down the peeps at Seattle’s Blu Skillet. A few years ago, Cook’s illustrated blew their cover, naming them the best steel pan on the market. Since that laudatory article, they’ve stopped answering emails and just let their waitlist overflow with people dying to own this artfully forged cookware. 

The problem is, there are only two people at this operation, and they have no plans or interest in expanding. Each pan is hammered into shape, beginning with a flat disk of steel. The handles are made from a simple steel dowel. Their studio is a Santa’s workshop for cooks.
