Am I crazy to order 20kg of pasture-raised pork rind to make healthy #chicharrón for Noa?? . - In Thailand deep-fried pork rind is popular but they are all fried in harmful vegetable oils. Pigs come most probably from commercial farms. We just got these skin pieces from a pasture-raised pork farm from Chiang Mai, which makes a huge difference in quality. I intend to remove as much fat as possible from the skin , which will be then dehydrated. The dry skin can be stored frozen and I want to fry them in coconut oil to replace it with polyunsaturated fat. Baking is also possible but I think frying it in coconut oil quickly would be better to minimize oxidation. The results will be low-pufa, collagen-rich snacks which taste yummy! - I remember reading an article from Dr Ray Peat that pigs who live in a cold climate tend to have more polyunsaturated fat under the skin to protect itself from the cold, so by giving them some pullovers, they will have less PUFAs!
