Cast Iron deep Dish

Rosespirit and I made this tonight and it was fun to make and simpler than you’d think to make, you need a few basic ingredients and then from there its whatever you want to make whatever you like toppings wise.

Ingredients

  • Needed
    • Pre-made dough
    • Butter (or olive oil)
    • Mozzarella Cheese
    • Tomato Paste
  • Optional (Toppings we used)
    • Pineapple
    • Green Peppers
    • Hot Peppers
    • Onions
    • Mushrooms
    • Bacon
    • Tomatoes
    • Garlic
    • Zucchini
    • Feta Cheese

Oil or butter up the pain and put in the dough, its just easier to use pre-made stuff, you might have to cut and move chunks of dough to make it fit since usually the store bought stuff is for big rectangular tins.

Put down the tomato paste, followed by a layer of cheese. After that add your toppings and then another layer of cheese.

Pre-heat the oven to 450 F (~230C) and bake for 25-30 minutes, when removing be very careful as the pan will be extremely hot. Let sit and cool for ~15 min before cutting to eat. From prep to eating took ~1.5 hours.

There’s a long, storied history surrounding Chicago deep dish pizza, and I’ve done my fare share of “research” into it over the years. While Pequod’s is a personal favorite, I’ve always enjoyed the pies at Lou Malnati’s as well, which many of my friend’s feel is the best. But just last week I discovered that there’s another Malnati, Rudy Malnati Jr., who runs a small chain of Pizano’s Pizza restaurants around the Windy City!

With one shop just a short walk from the McCormick Convention Center, I popped in with a few colleagues for a Meat Lover’s deep dish…

Packed with sausage, bacon, pepperoni and Canadian bacon, the spinkle of dried oregano on top was a nice touch.

The menu also claims that Oprah herself voted Pizano’s thin crust pizza the best in Chicago, so we ordered and enjoyed a sausage and mushroom pie…
