My husband loves chocolate so much that on our honeymoon we went to Cadbury World in Birmingham. He also pinched all the samples they gave me there. My long time valentine wanted something sweet so: Doughnuts Preheat oven to 350C 2 cups Spelt flour (use whatever you’re cool with) 2 tsp baking powder Pinch of sea salt 1 cup sugar (I used a mix of ¾ cup coconut sugar and ¼ white sugar that was left over from making candied lemon peel) 2 Tbs butter ( I used the vegan butter I made a few posts back) 1 tsp vanilla 1 ¼ cup of almond milk 3 Tbs of cocoa powder (optional) Put the flour, sugar, baking powder, salt and mix thoroughly. Melt your butter and and then pour into your almond milk and add the vanilla. Mix well. Add this almond milk mixture to your dry ingredients. Combine well to ensure all ingredients are mixed well but don’t over do it. I then halved the mixture to make half of the doughnuts chocolate. I added 3 heaping table spoons of sifted Fry’s cocoa powder (aka Cadbury’s) and mixed it in thoroughly. Spray your doughnut pans with coconut oil (or use butter to grease them) Fill the the pans 2/3 full and bake for 10 to 12 mins. rotating the pans halfway through the baking. They are done when they start to brown slightly at the edges. Cool for a minute uses them remove them to a cooling rack. Icing: 1 cup powdered sugar 2 Tbs butter (softened) 1 Tbs almond milk Combine all together mixing till smooth. You may have to add a bit more milk depending. For chocolate icing: 1 avocado mashed 1 heaping Tbs of cocoa (again Fry’s) ¼ cup of coconut sugar. Mix all together well till fully incorporated. You may want to use more sugar depending on your taste. Decorate your doughnuts with what you want and enjoy fully and lovingly. Love valentines doughnuts ( I’m Canadian )
