PINEAPPLE JUICE OR JUGO DE PIÑA

Juice is big in Ecuador, like really, really big. Every market, every vendor, and every household serves every kind of juice you can imagine – orange juice, coconut juice, pineapple juice, blackberry juice, guava juice, tomate de arbol juice, taxo juice, and countless more. So for the first juice made in our own home, we started with something familiar that we knew we couldn't screw up – pineapple juice. Today now marks the third time A has made it, and I think I’ve already had three glasses full this morning. This is delicious, light, and good with any meal or snack. 

Ingredients:

1 whole pineapple, peeled, cored and cut in medium size chunks
6 cups of water
¼ cup to ½ cup sugar, adjust based on preference and sweetness of the pineapple
Juice from 1 lime

Directions:

1. Working in batches place the pineapple chunks with the water, sugar and lime juice in the blender, and blend well.
2. Strain the juice and serve with ice.
