Used a filet knife to butterfly the pork roast into a sheet of pork.
Made a blanket of bacon slices; put pork sheet on top and spread haggis, leaving about 1 inch of space around.
Rolled, wrapped, and tied with kitchen twine. Bake at 400-425 degrees for about an hour fifteen minutes. When the bacon in crispy, use a food thermometer to check for internal temp of 165 degrees. Remove from oven and let juices re-distribute. Served with a marinated cold leek as salad. Clean leeks, boil 15 minutes or so, drain, chill while covered with honey-Dijon mustard salad dressing.
