#dandelion
As promised, here is the recipe for the dandelion blossom cookies I baked yesterday for Beltane! Personally, I think they’re really bland, but maybe some of you will enjoy them more.
Ingredients:
- ½ cup vegetable oil
- ½ cup honey
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 cup dry oatmeal
- ½ cup dandelion flowers
Instructions:
- Preheat oven to 375 degrees Fahrenheit.
- Wash dandelions thoroughly. Make sure the ones you’ve picked haven’t been sprayed with weed killer or anything of that nature; no amount of washing will make that safe to eat!
- Remove the stems, leaves, and green flower bases from the dandelion blossoms. There’s a technique to this, which, as I discovered yesterday, I suck at: Pinch the tip of the yellow blossoms with the fingers of one hand and grip the flower base very hard with the fingers of the other. Supposedly, this should release the florets from the base. Humph.
- Blend oil and honey in a bowl.
- Beat in the eggs and vanilla extract.
- Stir in flour, oatmeal, and dandelion flowers.
- Scoop teaspoonfuls of batter onto a lightly oiled cooking sheet.
- Bake for 10–15 minutes or until the cookies reach your preferred level of crispy.
That’s all there is to it! Quick and easy. Like I said, I think they’re pretty bland, and I even had to use flavored oatmeal because I didn’t have any plain. They kind of taste like really weak sugar cookies.

While blending the ingredients, I stirred clockwise, picturing each of the correspondences listed above as physical energies flowing into my body and filling me up. After the cookies were done, I gave thanks to the element of fire for helping me feed myself and left an offering of milk and cookies out for the fairies.
