My job at @edenfreshcafe has allowed me to create new specials and dishes for the menu. Today’s special was Impossible Meat tacos with ranchero beans and corn salsa, this will be a recurring special. Our soup made by yours truly was a vegan mushroom barley that brought back memories of lunches at @bensdeli in New York.

So this was my afternoon…a boatload of lasagna! 3 boxes of noodles, 3½ jars of sauce, 12 eggs, 2 eggplants (for keto substitute noodles), 6 oz combined Asiago, Parmigiano and Romano, 6 lbs low moisture mozzarella, 1½ lbs cremini, 3 bags of spinach and 7 lbs of ricotta…accept no substitute.

My Mom and I were craving Chinese food and the local restaurants were proving to be subpar…so of course we made some ourselves. It took three days to eat everything we made…
