The other day, I got curious about how surnames would work in Beastars. So I decided to look it up, and to my great joy I found this tweet by series creator Paru Itagaki. (original link)
While I don’t know the first thing about Japanese, through automatic translators I gathered:

So, per her word we would have “Legoshi Gray Wolf”, “Bill Bengal Tiger”, and so on and so forth. (Perhaps comparable to the standard “Sonic the Hedgehog”formula?)
On one hand, this keeps things simple and straightforward, which is good. On the other hand, I did have a little headcanon or two (for example, Louis (Red Deer)’s surname being “Horns”, due to his father being leader of the Horns Conglomerate), but alas.
