Not so traditional Anzac cookies!

Ingredients:
• 1 cup of rolled oats
• 1 cup of almond meal
• 1/3 cup chopped macadamia nuts
• ½ cup medjool dates
• 2 tbsp. 100% pure maple syrup
• 2 tbsp. coconut oil
• ¼ tsp. baking soda
• pinch of Himalayan sea salt

Method:
• Preheat oven to 180 degrees
• Blend rolled oats until smooth
• Add oats, almond meal, chopped macadamias, baking soda and sea salt to a bowl and mix until combined
• Blend dates until a paste forms and add to mixture along with melted coconut oil and maple syrup
• Stir until well combined (may need to use hands!)
• Divide mixture into approx 1 tbsp chunks, roll and flatten onto a lined baking tray
• Bake for 15 minutes or until golden brown
• Allow to cool and enjoy!
