Know where your tea is from!

While looking for good quality green tea, we came to know how difficult it is for the farmers of Meghalaya to dry their produce, such as - tea, ginger, turmeric, etc. 

Zizira has always believed in helping farmers - whether it is to add value to their products or encourage natural ways of farming. So we set out to help the local farmers by making them a dryer based on Rocket Stove Technology, which can work on natural energy rather than electricity. 

And what can we say - We were successful in our mission! Not only did we get our hands on some really magical green tea, but we also contributed something that will make these farmer’s life just a tiny bit easier.

Preparation

  1. Rinse the rice till the water runs clears of the starch
  2. Soak the rice for one hour then set it aside
  3. Slice the almonds, dried coconut and cashews
  4. Grind the green cardamom to a fine powder

Instructions

  1. Use a strainer and drain out the water from the rice
  2. Heat ¾ of the milk and let it come to a boil
  3. Reduce the flame and add the rice
  4. Stir the milk and rice till it looks well-cooked while ensuring that the rice doesn’t stick to the vessel
  5. Once the rice looks well-cooked, add sugar and the condensed milk
  6. Continue to stir frequently so that there are no lumps and the rice doesn’t stick. Remember to keep scraping the sides and adding the organic milk so that the rice doesn’t stick to the sides
  7. Watch out for when the rice and the milk have mixed well together. You will now notice that the kheer is thicker and sticky and the color has changed to a creamy white
  8. Now add the almonds, dried coconut, cashews, pistas and raisins
  9. Continue to stir for the next 5 to 10 minutes till all the nuts and raisins are well mixed,

Step 1: Lightly roast Nei-liehfor 3 min under low heat. Once they crackle and release a nice aroma, set aside to cool. Pound with mortar and pestle or dry grind in a grinder (for a few seconds).

Step 2: Get the Ingredients ready.

Step 3: Mix together the radish, onion, chilli and the powdered Nei-lieh. Add salt and lemon juice to taste. Toss the ingredients until evenly mixed and serve fresh.

Tips:

  • Squeeze out the watery part from the chopped radish.
  • Take care while roasting the seeds. Use low heat. Do not over roast.
