Kickin off my Friday morning with a splash of blue!
I am so ready for the weekend! It has been a busy couple of days. I topped this ocean colored nicecream off with sweet frozen grapes, fresh berries, granola and coconut flakes.
Such an energizing way to start the day.

This concoction is made of
2 frozen bananas
1 frozen fig
1 tbsp of almond butter
1 tsp of spirulina powder.
Add ice and a splash of almond milk

Blend and devour!

Been a busy couple of days, but back in the swing of things! Woke up this morning craving cherries, so I made myself a bowl of sweet pink #nicecream. I topped it off with more berries, cocoa nibs and frozen grapes. Anyone else like to snack on frozen grapes? Absolutely the BEST way to have them.
Hope everyone’s having a fabulous day!

Pink fluff is made of:
2 frozen bananas
6 large frozen cherries
1 tbsp of soy vanilla yogurt
Add a splash of almond milk

Blend blend blend, top off with your favorite fruits/sweets and devour!

BBQ turkey & sweet potato sliders with spinach & arugula mix and blueberries.Boom.

Ingredients:

  • 6oz 99% lean ground turkey (or choice of lean protein)
  • 150g sweet potato slices
  • Arugula and spinach
  • BBQ sauce (low sodium)
  • paprika, cayenne pepper, garlic, pepper, diced bell peppers

Instructions:

  1. Set oven to 405F.
  2. Slice sweet potato horizontally to create thick wedges.  Weigh out 150g.  Place these on a baking sheet and lightly spray with olive oil. Bake in the oven for 17-20 min.  You want the wedges to be soft but firm.
  3. In a bowl, mix ground turkey with bell peppers and the seasonings.
  4. Form small meat patties, about 1.5oz each. (note that the picture is  showing only 3oz worth of ground turkey)
  5. Spray a skillet with oilve oil and set on medium heat.  Place the patties in the skillet and cook.
  6. Assemble the sliders >> sweet potato > greens > turkey > 1tsp BBQ sauce > sweet potato.

Approx macros (without blueberries): 339 calories, 42g protein, 37g carbs, 2g fat

Sliders (hamburguesitas) de pavo con salsa barbacoa y camote con mezcla de espinacas y rúcula, y arándanos.Bum.

Ingredientes:

  • 6 oz de pavo molida de 99% sin grasa (o la opción de proteína magra)
  • 150g de rodajas de papa dulce
  • Rúcula y espinacas
  • Salsa de barbacoa (bajo en sodio)
  • Pimentón dulce, ajo, pimiento, pimientos cortados en cubitos

Instrucciones:

  1. Poner el horno a 405F.
  2. Cortar la papa dulce horizontalmente para crear cuñas gruesas. Pesar 150 g. Colocarlos en una bandeja de horno y rociar ligeramente con aceite de oliva. Cocer en el horno durante 17-20 min. Las cuñas deben ser suaves pero firmes.
  3. En un tazón, mezclar molida de pavo con pimientos y los condimentos.
  4. Formar pequeñas empanadas de carne, unos 1,5 oz cada uno. (favor de saber que la imagen se muestra sólo un valor de 3 oz de carne de pavo molida)
  5. Rocíar una sartén con aceite de oliva y poner a fuego medio. Colocar las empanadas de carne en la sartén y cocinar.
  6. Montar el sliders >> papa dulce > verduras > pavo > 1 cucharadita de salsa de BBQ > papa dulce.

Macros aprox (sin arándanos): 339 calorías, 42g de proteínas, 37g de carbohidratos, 2g de grasas

GARLIC BUTTER STEAK AND SPINACH
Ingredients:
1 2/3 lb (750g) flank steak, sliced against the grain
1 ¼ lb (500g) fresh spinach
4 tablespoons butter or ghee (or less if you want)
4 garlic cloves, minced
Juice of ½ lemon
¼ cup (60ml) low-sodium beef broth
¼ cup chopped parsley
¼ cup chopped chives
¼ teaspoon crushed red pepper flakes
Salt and fresh cracked pepper, to taste
The steak marinade

2/3 cup low-sodium soy sauce (or coconut aminos if you’re strictly paleo)
¼ cup lemon juice
¾ cup olive oil
2 tablespoons Sriracha sauce (or any hot chili sauce you like)

Shrimp and Summer Veggie Foil Packs ~
These are so easy to make and they’re perfect for a weeknight dinner or your next summer cookout! They’re brimming with tender, juicy shrimp and vitamin packed veggies and it’s all deliciously seasoned. And the best part, it’s all cooked together in individual foil packs so clean up couldn’t be easier!
~
1 small zucchini, ends trimmed, sliced into half moons (1 1/3 cups)
1 small yellow squash, ends trimmed, sliced into quarters (1 1/3 cups)
1 pint grape tomatoes
1 green bell pepper, chopped (1 cup)
½ small red onion, chopped into chunks and separated
1 ½ cups fresh corn
1 ¼ lbs. large (21/25) raw shrimp, peeled and deviened
3 Tbsp olive oil
3 garlic cloves, minced (1 Tbsp)
Salt and freshly ground black pepper
1 tsp paprika
½ tsp celery seed
½ tsp dried thyme
¼ tsp cayenne pepper (or to taste, optional)
1 ½ Tbsp minced parsley, for garnish (optional)
4 lemon wedges, for serving
Instructions
Preheat a grill over medium-high heat to 425 degrees.

Cut 8 sheets of 12 by 14-inch heavy duty aluminum foil. Use two sheets of foil per packet.

To a large mixing bowl add zucchini, squash, tomatoes, bell pepper, red onion, corn and shrimp.

Drizzle over olive oil then sprinkle over garlic, 1 tsp salt, ½ tsp pepper, paprika, celery seed, thyme and cayenne pepper.

Toss mixture well to evenly coat.

Layer two sheets of foil per packet, with the first sheet of foil laying in opposite direction of the second. Divide mixture among double lined foil adding it to the center in a rectangular shape.

Wrap up sides of first sheet of foil and roll edges several times to seal, then place second sheet going opposite length and wrap while rolling edges to seal.

Grill until shrimp is cooked through, about 12 - 14 minutes, while filliping packets over to opposite side once halfway through grilling.

Carefully open packets as steam will escape. Sprinkle with parsley and serve with lemon juice for spritzing.
