2 Tbs. finely chopped shallot
2 Tbs. finely chopped fresh flat-leaf parsley
1 Tbs. finely chopped fresh mint
1 Tbs. Dijon mustard
2 tsp. dried rosemary, crushed
1 clove garlic, minced
1 ½ lb. (750 g.) ground lamb
½ lb. (250 g.) ground beef chuck
Kosher salt and freshly ground pepper
6 pita rounds
