2 Tbs. finely chopped shallot

2 Tbs. finely chopped fresh flat-leaf parsley

1 Tbs. finely chopped fresh mint

1 Tbs. Dijon mustard

2 tsp. dried rosemary, crushed

1 clove garlic, minced

1 ½ lb. (750 g.) ground lamb

½ lb. (250 g.) ground beef chuck

Kosher salt and freshly ground pepper

6 pita rounds

Mint-Feta Pesto (recipe follows)

Shredded lettuce for serving

Endives Tarte Tatin

Ingredients:
6 endives (chicory)
2 small shallots (finely sliced)
1 clove garlic (ground)
6-8 small potatoes (cooked and sliced)
250 g/ ½ pound chestnuts (peeled, cooked & sliced in half)
5 topinambours/ Jerusalem artichokes (peeled and sliced in ‘rondelles’)
125 g/ 2/3 cup Sainte Maure de Touraine goat’s cheese (or any of your favourite cheese – one that will melt beautifully!)
2 tbsp brown sugar
40 g butter
Salt & pepper (for seasoning)

Pastry:
For the shortcrust pastry:
200 g/ 1 & ½ cup plain flour
125 g/ ½ cup unsalted butter, chilled and sliced in cubes
½ teaspoon salt
1 large egg
3 tbsp cold water

  • ¾ cup warm water (about 105°F)
  • 1 cup cake flour

  • 1 ¼ tsp. kosher salt
  • 2 Tbs. extra-virgin olive oil

2 fresh mission figs

  • 1 cup arugula
  • 3 slices of prosciutto
  • 1 tablespoon Mascarpone
  • 3 ounces Mozzarella
  • 1 ounce Blue Cheese

Это мой новый грибной фаворит


Подсмотрела у кого-то в Инстаграмм далеко не pp.food , но очень вкусно.


Шампиньоны можно целиком жарить, но я порезала на 3 части. Смешала майонез и чесночный перец. Обмазала этой смесью грибы и обжарила на среднем огне. Получилось огнище

Такую же махинацию можно провернуть с цельными грибами на костре, заменив тем самым мясной шашлык. (Пока я знаю, что в тарелке ещё остались грибы , мое сердечко беспокойно )

It’s for a story, so although I’m limited in orthographic choices because it has to phonetically sort of make sense to a proficient english speaker who’s never seen it before, I’m really enjoying making it! Here’s a sample in case anyone’s interested
