Americans, I’m fascinated by your weird as shit regional dishes. What’s the weirdest regional dish from your state that is actually good?

The reason I ask is that every once or so often I stumble across a tweet or a post of someone going “Man I love ass-to-mouth burgers from DogTown, Alabama” and I’m left speechless.
Meet a horseshoe from central Illinois. It’s typically Texas toast on the bottom, two burger patties side by side, French fries, and then topped with a white cheese sauce. You can use other meats as I quite like it with a fried pork tenderloin. And there is a breakfast version of it as well.
New rule - if your weird dish contains another weird dish you have to explain that to.
What is different about Texas toast vs regular toast?
It’s double the thickness of regular bread.

May I introduce you to Richmond VA’s Sailor Sandwich? Rye bread, brown mustard, hot pastrami, swiss, and a grilled split knockwurst on the top.
New England brown bread. It comes in a can. It sounds gross, but it’s honestly great; you just have to grill it and put butter on it and have it with baked beans and franks (no bun; you slice them and eat them with the beans).
We love our molasses up in Yankeeville. I also have very fond memories of my grandfather’s kitchen, aromatic with the freshly-baked molasses cookies he loved to give his grandkids when they were still oven-warm.
