I’ve actually cut these by hand and let me tell you!

This machine is amazing. Even leaving these wheels out at room temp for 4 days the rind was STILL too hard to cut with a cheese wire that I had to use my double ended knife and kind of seesaw it through the rind.

God those were always the WORST DAYS! I mean the smell of fresh park was AMAZING! But the effort it took was too much.
