Step 1: Visit the San Pedro butcher shop for your imported/specialty meats, cheeses, and fresh mushrooms (misc stuff too, our homemade BBQ sauces, olive oil, etc).

Step 2: Walk 5 min away towards the Santiago dock and hit Geronimo’s farm (not affiliated w/ Joe’s, just the freshest stuff around).

Step 3: Pick your produce needs.

Step 4: Combine into your dish of preference (ours tonight was a bolognese-ish sauce; I say ish due to some lack of traditional ingredients).*

Step 5: Enjoy!

This beautiful dish—inspired by recipes from the Emilia-Romania region of Italy—features a mouthwatering creamy Bolognese sauce that’s perfect for a chilly fall night.  

Rigatoni with Creamy Bolognese and Peas

Ingredients
1 box Rigatoni
1 celery stalk
1 carrot
½ onion
4 ounces Italian Pancetta
2 tablespoons extra virgin olive oil
1 pound ground beef 80% lean
½ pound ground pork
½ cup dry White wine
1/3 cup tomato paste
3 cups water
½ cup Parmigiano-Reggiano cheese, grated
3/4cup heavy cream
1 cup peas

Preparation

1. In a blender, process the vegetables and pancetta until finely ground.
2. Add the ingredients and olive oil to a medium sized pot and cook for 10 minutes over medium heat
3. Add meat and brown well, about 15 minutes. Deglaze with the white wine; evaporate completely then cover with water. Add tomato paste and bring sauce to a simmer.
4. Cook for approximately 2 hours, the sauce should be thick, and the meat should be very tender. Add peas, cook three minutes, add heavy cream, bring to boil.
5. Meanwhile, bring one large pot of water to a boil and cook pasta according to package directions and drain.
6. Toss pasta with sauce then remove from heat and add the cheese.

One-Pot Lentil Bolognese

Ingredients

for 4 servings

  • 8 oz dried spathetti
  • 2 tablespoons olive oil
  • ½ large yellow onion, minced
  • 2 medium carrots, sliced
  • 1 stalk celery, sliced
  • 4 cups white mushroom, sliced
  • 1 teaspoon salt, plus more to taste
  • 1 teaspoon pepper, plus more to taste
  • ½ cup red wine (optional)
  • 3 cloves garlic, minced
  • 28 oz diced organic tomato, 1 can
  • ¼ cup tomato paste
  • 2 cups vegetable broth
  • 1 cup dried brown lentil
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried rosemary
  • ½ teaspoon baking soda
  • ¼ cup fresh parsley, chopped, for garnish

Preparation

  1. In a large pot, cook the pasta according to the package instructions. Drain and set aside.
  2. Heat the olive oil in the same pot over medium heat. Add the onion and sauté until translucent, about 2 minutes.
  3. Stir in the carrots, celery, mushrooms, salt, and pepper. Sauté until mushrooms have cooked down and are turning golden, about 5 minutes.
  4. Add the wine and simmer until most of the liquid is absorbed, about 4 minutes.
  5. Add the garlic and stir to combine, then add the diced tomatoes, tomato paste, broth, lentils, basil, oregano, rosemary, and baking soda. Stir to combine.
  6. Bring to a boil, then cover, reduce the heat to low, and simmer for 40 minutes, until the bolognese is thickened.
  7. Serve the bolognese over the pasta, or, for a lighter option, use zucchini noodles or spaghetti squash.
  8. Garnish with parsley.
  9. Enjoy!
