Thin-Crust Pizza Dough

  • 1 ½ tsp. active dry yeast
  • 1 tsp. sugar
  • ¾ cup warm water (about 105°F)
  • 1 cup cake flour
  • 1 cup plus 3 Tbs. all-purpose flour
  • 1 ¼ tsp. kosher salt
  • 2 Tbs. extra-virgin olive oil

2 fresh mission figs

  • 1 cup arugula
  • 3 slices of prosciutto
  • 1 tablespoon Mascarpone
  • 3 ounces Mozzarella
  • 1 ounce Blue Cheese

How to make homemade mozzarella cheese. 「モッツァレラチーズ 」の作り方


Recipe & Procedure Pasteurized, non-homogenized milk. When milk reaches 35 degrees, add 1.5 grams of citric acid. After 10 minutes, add 0.2 grams of rennet. After 15 minutes, it hardens… Make a cut. Scoop out whey. Ferment at 40 degrees for 1-2 hours. After fermentation, add hot water. Knead and shape. Soak in salt water with a concentration of 20% for 30 to 1 hour. Wipe moisture. Wrap it. Refrigerate overnight. Fresh mozzarella cheese is soft, slightly sweet, milky and delicious. Make a set with avocado. It is very delicious to eat it with wasabi and soy sauce like sashimi!

モッツァレラチーズ の作り方。 レシピ&手順 低温殺菌、ノンホモジナイズ牛乳1リットル。 牛乳が35度になったらクエン酸を1.5グラム入れる。 10分後、レンネットを0.2グラム入れる。 15分後、固まる。。。切れ目を入れる。 ホエイを掬い出す。 40度で1〜2時間、発酵させる。 発酵後、お湯を入れる。 練って形にする。 濃度20%の塩水に30~1時間浸ける。 水分を拭く。ラップして。一晩冷蔵庫に入れる。 フレッシュなモッツァレラチーズ は、柔らかくて、ほんのり甘味があって、ミルクの香り、美味しい。 アボカド とわさび&醤油で食べるととても美味しい! 温度調整は低温調理器具/Precision Cooker/Sous Videはanovaを使った。

Una gran noticia! La UNESCO ha declarado el arte de la pizza napolitana patrimonio cultural de la Humanidad. Un reconocimiento, sin duda, merecido que nos alegra a todos. La pizza es universal!

Los napolitanos, muy orgullosos de tan delicioso manjar, presumen de la leyenda entorno a la pizza Margherita, según la cual, en 1889 Margherita (reina de Italia y reconocida gastrónoma), invitó al Palacio Real de verano de Capodimonte a un conocido fabricante de pizzas llamado Raffaele Eposito que, en aquél momento, regentaba la pizzeria más famosa de Nápoles. La reina le pidió que le prepara una nueva variedad. A Esposito se le ocurrió utilizar la mozzarella, a la que añadió tomate y la decoró con hojas de albaca. El rojo, blanco y verde, los tres colores de los ingredientes, coincidían con los de la bandera de Italia.

Curioso ¿no?
