According to the article, Sorbet Shark was originally designed as an oceanographer who helped out Captain Ice Cookie. Sorbet didn’t remember being a mermaid but had a strange love for the ocean, and along the story, they learned who they really were. Of course, this ended up changing to the current story.

When Coffee Crayfish was a young cookie, he was cursed with this ability. Though, he considers this more of a blessing than a curse. Especially since he got an amulet with the curse to control it.
Coffee Crayfish is usually sheltered to prevent him from getting mad, he usually just talks with his family.
