SALSA VERDE CHIKN ENCHILADAS!
This meal has been such a staple lately, specially because they take so little to make and are super delicious and Mexican food is hands-down my favorite food of all time(and Japanese) . I could live very happily with just a basket of chips and salsa, and a plate of enchiladas served to me daily. Annnnnd a margarita or two wouldn’t hurt either.
I don’t have an exact recipe for this but this is how I make them: In a bowl I mix in around ½ cup of salsa verde and half a cup of Greek yogurt (I use @fage.es ) . I pour a small amount of the salsa into the bottom of a baking dish, then fill some corn tortillas with shredded chicken (you can also use a plant based chicken option) Roll tortillas and place them seam side down in the pan. Cover enchiladas with the remaining salsa/yogurt and sprinkle with cheese/vegan cheese of choice. I bake them for around 15-20 min until the cheese is melted and bubbly. I like to eat mines with guacamole, sour cream would be yum too ✨
