What I Ate Today

Soo today I started off my morning with a bowl of cheerios, a banana and a splash of unsweetened almond milk.
I then made myself a wrap to take to the library. I mixed together mayo, sriracha and lime to make a sweet chilli base that I added spinach, rocket, red cabbage, cucumber and tomato to. However in my attempts to get all the yummy veggies in I overstuffed it, and it broke so I had to eat it there and then. Lunch turned into second breakfast! (I wasn’t complaining ).
Then because I work over traditional dinner hours I picked up a baguette to try and keep me going through my shift (not very nutritional but it’s something). However it didn’t go to plan as it made me more hungry :(( so I bought a dark chocolate bounty bar as well. I am so obsessed with them right now they’re so yummy!
By the time I got home from work and tidied the house it was 1am, so I made a quick simple noodle dinner.
I boiled a packet of instant noodles (without the sodium packet) with some chopped broccoli before draining it and mixing in some homemade vegan cheesy vegetable sauce I had in the fridge. Then I added some lime, salt and pepper to lift it a bit and voila! Not the best meal I’ve ever made but it was quick easy and tasty. Plus the sauce was made from onions, carrots and cashews so it was full of nutrients!!!

SALSA VERDE CHIKN ENCHILADAS!

This meal has been such a staple lately, specially because they take so little to make and are super delicious and Mexican food is hands-down my favorite food of all time(and Japanese) . I could live very happily with just a basket of chips and salsa, and a plate of enchiladas served to me daily. Annnnnd a margarita or two wouldn’t hurt either.

I don’t have an exact recipe for this but this is how I make them: In a bowl I mix in around ½ cup of salsa verde and half a cup of Greek yogurt (I use @fage.es ) . I pour a small amount of the salsa into the bottom of a baking dish, then fill some corn tortillas with shredded chicken (you can also use a plant based chicken option) Roll tortillas and place them seam side down in the pan. Cover enchiladas with the remaining salsa/yogurt and sprinkle with cheese/vegan cheese of choice. I bake them for around 15-20 min until the cheese is melted and bubbly. I like to eat mines with guacamole, sour cream would be yum too ✨

Ps: this is not how traditional enchiladas are made, just a healthier and easier version ✌

This smoothie is one of my favorite combos, it’s packed with all the good stuff to keep you fueled all morning, it’s delicious, it has coffee, and it tastes like a frapp from Starbucks so what else could you ask for?

1 frozen banana, 1 cup of unsweetened almond milk, 1 tbsp of nut butter, 1 scoop of vanilla protein powder (I use @nuzest_europe), ½ tbsp cacao powder, 1 scoop collagen peptides (I use @vitalproteins.es) and a shot of espresso or leftover coffee ( I usually freeze my coffee into ice cubes, it makes your smoothies thicker)

Vanilla & cherries protein overnight oats✌

To a bowl add ½ a cup of rolled oats, 1 tsp of chia seeds and one scoop of vanilla protein (I use @nuzest_europe ) add in 2/3 cups of almond milk and soak overnight. In the morning mix in some fresh cherries, Greek yogurt and grated dark chocolate

It’s finally cherry and watermelon season and I’m here for it!

Another staple meal! Basically I just mix potatoes with some type of vegetable - 9 times out of 10 it’s broccoli or this mixture, which is broccoli, sugar snap peas, water chestnuts, and carrots. Topped with olive oil for some fat!
