Mole sauce is in the works for leftover turkey enchiladas. Toasted ingredients include Ancho chilis, New Mexico chilis, organic pepitas from Edison Grainery, peanuts, almonds, black peppercorns, 2 cloves, 1 star anise, bay leaf, coriander seeds, cinnamon stick, celery salt, dry thyme. After toasting chilis soak them in hot water. Sauté onion and garlic in olive oil. Add tomatoes and let them sizzle a minute. Then add all ingredients to the stewing pot along with the liquid from the peppers you soaked & some chicken stock. Cook down and blend. Thin with more stock if necessary. Add ½ to 1 wheel Sweet Mexican chocolate. Yum! #food #mole #delishytown #turkeymole #mexicanfood

Whole Wheat Nachos + salsa.
If you are on diet this is an amazing snack you can have .
All I did is just backed the left over laal ruti and made nachos. And with some onions tomatoes and lemon juice made the salsa. And some cheese on top.
Don’t throw away that hard and dried Ruti/Roti
Bake it, make it and turn it into nachos.

Holy Guac:
avocadoes/tomatoes (diced)/red onion (diced)/garlic (minced)/jalapeno (minced)/serrano (minced)/lime (juice)/kosher salt/ground cumin/cayenne
I threw the pits on the surface to mitigate the browning and to make it look nice.
Verdict: Amazing!

SALSA VERDE CHIKN ENCHILADAS!
This meal has been such a staple lately, specially because they take so little to make and are super delicious and Mexican food is hands-down my favorite food of all time(and Japanese) . I could live very happily with just a basket of chips and salsa, and a plate of enchiladas served to me daily. Annnnnd a margarita or two wouldn’t hurt either.
I don’t have an exact recipe for this but this is how I make them: In a bowl I mix in around ½ cup of salsa verde and half a cup of Greek yogurt (I use @fage.es ) . I pour a small amount of the salsa into the bottom of a baking dish, then fill some corn tortillas with shredded chicken (you can also use a plant based chicken option) Roll tortillas and place them seam side down in the pan. Cover enchiladas with the remaining salsa/yogurt and sprinkle with cheese/vegan cheese of choice. I bake them for around 15-20 min until the cheese is melted and bubbly. I like to eat mines with guacamole, sour cream would be yum too ✨
