Tonight’s dinner! Smoky tofu over quinoa with cucumbers and sauerkraut. Simple and delicious. I love meals like this. Hits the spot, loaded with protein, fills you up and makes you feel good. Then I have some cinnamon raisin bread cooling for later with some tea, I can’t wait. I took a nap and woke up and was a flury of activity, great reminder that rest can be just what we need. Special shoutout to @mcphersonkim56 for suggesting trying marinating the tofu in aminos, liquid smoke and cinnamon and slicing into matchsticks. This really is what made dinner special, we ate it right up. Thanks Kim!! Great combo! Plus I included a couple pics (swipe right) of her creations from #artisticvegan. If you are not familiar with Cannabidiol (CBD) oil yet you might wonder when I started to talk about marijuana. However, in contrast to the well-known THC, CBD is a non-psychoactive compound, won’t give you a „high“ and is not addictive. Nevertheless, it influences our brain and comes with several potential beneficial effects: epileptic seizures, inflammation, anxiety and sleep, just too mention a few.
For me, CBD oil really improved my quality of sleep.
I just want to mention that, in some, CBD oil can have side effects and CBD oil products vary in their quality and quantity of the active component.

, , ! They do what they want or how we educate them:). Especially in crazy #coronatimes, we have to take some .

and is such a big part of our busy daily lives. However, when it comes to hormones I am often quite confused about what they do and how I can influence them. That’s because our body is so complex, individual and especially when it comes to hormones: always in the flow.
That makes them even more fascinating to me.
Today I want to share with you my ways to reduce my cortisol. I think it already helped since I got my period after one year break. It’s been just ones but it that’s more than zero. Am I right :)? Find the blogpost linked!

It’s factly Friday, and since we are all home, we might have some time to read!

As I said last week: For me it’s unbelievable that even inside my body everything seems to be about timing!

While it is usually unnoticeable, I really felt it in form of my jet-leg on my flight back from Bali. To keep this precious timing within us it can be essential to know what affects our inner clock. There is scientific evidence of social interaction (also virtual), light, activity, meal time influencing our circadian rhythm. We can use this knowledge to find our inner harmony and get into our power which we need NOW MORE than EVER.

The black base is charcoal. Not really beneficial but nice to look at :).

For your Big Cosmic Bowl you’ll need:

TAKE:

Pitaya Base:

2 packs pitaya
1 cup frozen strawberries/raspberries
1/2 cup frozen cauliflower
1/2 cup dairy free milk I used almond milk

Charcoal Base:

2 bananas
1 cup of frozen kale
1/8 cup of coconut milk
1 tsp of charcoal

BLEND in a high powered blender or food processor until thick, creamy, and no chunks! Add your favorite toppings and enjoy.

SALSA VERDE CHIKN ENCHILADAS!

This meal has been such a staple lately, specially because they take so little to make and are super delicious and Mexican food is hands-down my favorite food of all time(and Japanese) . I could live very happily with just a basket of chips and salsa, and a plate of enchiladas served to me daily. Annnnnd a margarita or two wouldn’t hurt either.

I don’t have an exact recipe for this but this is how I make them: In a bowl I mix in around ½ cup of salsa verde and half a cup of Greek yogurt (I use @fage.es ) . I pour a small amount of the salsa into the bottom of a baking dish, then fill some corn tortillas with shredded chicken (you can also use a plant based chicken option) Roll tortillas and place them seam side down in the pan. Cover enchiladas with the remaining salsa/yogurt and sprinkle with cheese/vegan cheese of choice. I bake them for around 15-20 min until the cheese is melted and bubbly. I like to eat mines with guacamole, sour cream would be yum too ✨

Ps: this is not how traditional enchiladas are made, just a healthier and easier version ✌

All about the easy/lazy meals ✨

Sourdough topped with mashed avo, baba ganoush, eggs, dill and parsley, chilli flakes and EVOO.

Pretty damn good if you ask me.

Baba ganoush recipe:

2 large eggplants
2 garlic cloves
¼ c tahini
3 tbsp olive oil
2 tbsp lemon juice
Pinch of smoked paprika
Salt to taste.
Parsley to garnish (optional)

Slice the eggplants in half and roast at 200 degrees Celsius for about 60 minutes or until very tender. Scoop out the flesh (discard the skins) and drain for about 20 minutes. After that just blend the eggplant with the rest of your ingredients in a food processor and you are done! ✌

Sunday looking extra good! ;)

BBQ jackfruit bowl with pineapple salsa!

Jackfruit pulled pork it’s so easy to make and it will fool anyone into thinking it’s the real thing. This stuff is legit!

Rinse and drain one can of young green jackfruit, take out the center/hard part of the fruit and discard. Place in a mixing bowl and add 2 tsp smoked paprika, 2 tbsp coconut sugar, 1 tsp garlic powder, 1 tsp of onion powder, ½ tsp chili powder, ½ tsp pepper,½ tsp of salt. Toss to coat.
Then heat some oil in a skillet over medium heat and add your jackfruit, cook for 3-4 minutes, then add ½ cup of bbq sauce and enough water to thin and cook for about 20 minutes at low medium heat.

Pro tip: use leftovers to make “pulled pork” sandwiches ;)

Pineapple salsa

I don’t measure this but is basically chopped tomatoes, red bell pepper, fresh pineapple, avocado, cilantro, lime juice, jalapeño, sea salt and pepper

You can also use mango instead of pineapple, just as good.

2 whole wheat flat breads
½ block organic tempeh
½ cup pinto beans
1/3 cup pineapple salsa
1 cup chopped kale
¼ cup vegan cheese
1 tbsp taco seasoning
¼ cup pineapple

Grind up tempeh (She used a mini food processor) to achieve a minced ure and chop up kale and pineapple.
Add tempeh, taco seasoning and salsa (if you don’t have pineapple salsa, any other kind will work as well ) to a non stick pan and cook for a few minutes on medium to high heat. Stir in pinto beans, kale and pineapple.
Split vegan cheese and tempeh mixture onto one half of each flatbread, flip the other side over and bake in a non stick pan on both sides (medium heat) until golden brown.
Serve with a little bit of extra salsa or hot sauce and enjoy!
