Good Friday to all . I hope you’ve had a peaceful week.

Are you venturing out to do more things with friends ? Had a great lunch with @krisover50 at Carillon Point  & a week later, long-time friend @michaelmogelgaard & I had lunch at @bentohouse.aburiya  by #PikePlaceMarket. (@monybseattle, I thought it was the restaurant you posted a few days earlier.)

Wednesday, David & I dropped off my car off at a body shop in Kirkland, then stopped at @carillonkitchen  to pick up the scarf I’d left there when I met Kris. Both errands were great! I’ve been waiting 7 weeks to get my car fixed & was so happy to retrieve my scarf! 

On the way home we noticed a jerk in a white Audi dangerously weaving in & out of traffic, presumably thinking he’d get to his destination faster. ️

Approaching the cutoff from I-405 to I-90, we saw the same white car tailgating a blue car on the on-ramp ahead, & didn’t think much more about it, until…. 

A few minutes later we noticed a slowdown on I-90 & saw two cars askew, blocking the two left lanes ⚠️. One was a white Audi & the other car was blue.

As we crept closer, we saw two men fist fighting  on the freeway! The aggressor pulled the shirt up over the head of the other driver & was beating him. OMG, it was truly insane ! It looked like a movie was being filmed there. Where are the cameras?  Cars were slowing down & drivers watched incredulously. I was too shocked to record it on my phone. I thought I should report it, but to whom?

We speculated the blue car hit his brakes to warn the Audi, then BOOM, it rear-ended the blue car, infuriating the crazy driver  to the point that he pulled the other driver out & started wailing on him . Never mind it was on the freeway & there were cars all around. ‍♀️

Have you ever witnessed road rage? That was my first time & my advice: Steer clear & don’t engage.

There are people out there who are completely unhinged. Please drive defensively.

Founder Tony Shure’s “Van Salad”

Location: Seattle, WA

Chopt Founder Tony Shure had a dream…well, he had a couple dreams: One was to open a salad restaurant and change the way America eats. The other was to own his very own camper van and take it on the road. Lucky guy, it seems all his dreams have come true. 

In an effort to really understand the Pacific Northwest, the landscape and the food of the region, Shure drove his van along the coast, hitting-up every farmers market and specialty food shop along the way. Seattle’s Pike Place market is touristy, sure, but the quality of the fish, the fresh flowers and the veggies was legit. Tony fell in love with the hot-smoked salmon from Pure Fish Market, a family run business in the middle of the fish-tossing chaos. He ordered some to be Fedexed to his mother back in NY, and bought a generous fillet to bring back to the van, along with some heirloom chicory, dill flowers, snap peas and pickled onions. You see where we’re going here? With these stellar ingredients, “van salad” was born. Composed in the palm of one’s hand, van salad is a lettuce wrap filled with the most delicious things you can find on the road. Make a simple vinaigrette in a mason jar, drizzle it on top, and enjoy.
