things were grilled. we grilled chicken. what else can i say about the events of last night? we also grilled whole red peppers. and we drank wine while doing so. my boyfriend made guacamole again. we made tacos. it was freaking amazingly delicious. all of it.
The weather was perfectly warm, the sun was setting, and my wine glass never ranneth dry. If anyone is in college or just happens to get a little sloppy after their first glass, these are perfect. I rave about them to everyone and they have saved me a pretty penny for not having to replace my glassware every time we have people over.

Grilled Chicken Tacos
chicken breasts marinated in Italian dressing // whole red bell peppers // corn tortillas // guacamole // onion tossed with cilantro and lime juice
grill chicken 2 minutes per side on high heat & 8 minutes per side on indirect heat. grill whole bell peppers on high heat rotating when grill marks show.

There is nothing more Texan that breakfast tacos, nothing at all. Every time I am in Austin it is a ritual to walk to Jo’s (not from the house, but from blocks away where I found parking), seek out breakfast tacos, scarf them down, and then, you know, do all the other Austiny things.
Sometimes, though, and I hate to admit it, when I buy breakfast tacos, they are soggy and have been sitting in tin foil probably a short while but I’d venture to say since the weekend before… You never know EXACTLY what is sitting under that heat lamp.
Luckily, my fiance can whip up a breakfast taco in no time. And with a hot cup of coffee or a glass of orange juice, there is no better way to start the day.
INGREDIENTS
flour tortillas, warmed | eggs, scrambled | freshly diced white onion and tomato | freshly chopped cilantro | freshly sliced avocado | green salsa
- warm tortillas in the microwave or on the stove
- scramble eggs over low heat until cooked but still soft
- top tacos with mixture of onions, tomatoes, and cilantro and sliced avocado
There is a back-and-forth between juice lovers and haters and believers and and non-believers and followers and people who hate the followers…
My opinions have definitely wavered:
Juice is obviously good for you. No. Juicing depletes nutrients. No. We fixed that. No. It’s too much sugar. We added vegetables. But the vitamins and minerals are oxygenated. We fixed that too.
So I’m just going to go with my gut and make a wild claim that I believe green juices are healthy. And I found some today that were much more delicious than any others I’ve unhappily downed. They have a lighter and fresher taste while managing to pack in SIX POUNDS of organic produce. The story behind the company is pretty incredible as well.
And to be honest, my working out and eating schedule has been a little off. Not completely derailed.. but there’s a reason this isn’t a fitness post. I have been working 7 days a week for the past month and today was my first day off in… too long. And that was only with the excuse of taking the general admissions exam for graduate school. Needless to say, this was relief in a bottle and I strongly encourage anyone with juice qualms to try this line.
