*Earl Grey Tea Syrup*

In a small saucepan, bring ½ cup of water to a boil over high heat. Cover with a lid to prevent evaporation. Once water reaches a boil, turn off heat and add tea bag. Steep for 4 minutes. Add ½ cup sugar, and turn on heat once again. Stir occasionally, and cook until sugar melts completely. Remove from heat, and set to cool. Once cool, remove tea bag.

Number two of our little Tempest season brings you this light, fruity, easily prepared treat - perfect for lazy day on an island beach. Enjoy The Miranda!

Ingredients:

  • Pineapple juice
  • 4-6 cl Lapponia buckthorn liqueur
  • Sparkling wine of your choice (we used a pear flavoured one)
  • Coconut flakes

Preparation:

Mix the pinapple juice and the sparkling wine 1:1. Add the buckthorn liqueur and sprinkle your drink with coconut flakes. Get away from your crazy family for a bit, lean back in your beach chair, watch the sun set, and high-five yourself on your good life choices.
