On the 9th day before Christmas we are going to make, edible cookie dough! This is a no bake cookie dough and all you need to do is cook the flour.
Get creative by changing the extract and mix ins.

| Recipe |
2 Cups Flour (bake at 350º for 10 - 12 minutes)
1 Cup Butter
1 ½ Cups Sugar
½ tsp Salt
3 Tbsp Milk
½ tsp Vanilla Extract
Sprinkles

I want to share these amazing, no bake, easy to make cookie dough energy bites. I have a sweet tooth, but also wants stick in eating healthy. The only changes I made was using maple syrup instead of honey. So simple and easy to make!

These energy bites are great sweet treats and they make a fantastic snack!

Ingredients

2 cups rolled oats

2 cups flaked unsweetened coconut

½ cup peanut butter (extra as needed)

½ cup maple syrup (extra as needed)

¼ cup chia seeds

½ teaspoon salt

½ teaspoon vanilla

½ cup chocolate chips

Directions

Pulse the oats and the coconut until coarsely ground.

Add peanut butter, maple syrup, chia seeds, salt, vanilla, and chocolate chips. Pulse again until well-mixed and the chocolate chips are cut into smaller pieces.

Roll into balls. (If it’s too dry, just add a little more maple / peanut butter and mix again – I usually just eyeball the amounts until it gets sticky enough).

Freeze until solid. Store in freezer or refrigerator.

Snickerdoodles 

My take on a comforting classic. 
*makes 12 cookies 

Ingredients 

1 cup + 5 ½ tbsp all purpose flour 

¾ cup granulated sugar 

1 stick unsalted butter, softened 

1 egg, room temperature 

1 1/8 tsp baking powder 

¼ tsp salt 

½ tsp vanilla extract 

1 ¼ tsp cinnamon 

Cinnamon sugar - ¼ cup sugar + ½ tsp cinnamon

Directions 

Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. 

In a small bowl, sift together the dry ingredients and set aside. 

In another small bowl, combine the ingredients for the cinnamon sugar and set aside.

In a stand mixer fitted with a paddle attachment, cream together the butter and sugar until the mixture is smooth and most of the sugar has dissolved. 

When the butter and sugar mixture has come together, add in the egg and vanilla and mix until incorporated. 

Once the wet ingredients have come together, add in the dry ingredients and mix until the cookie dough begins to form, being sure to not over-mix.

Using a large tablespoon measure or small ice cream scoop, scoop out the cookie dough and roll it into a ball, then generously toss it into the cinnamon sugar. 

Repeat this process until you have 12 balls of cookie dough. 

Place them a few inches apart on the baking sheet and bake for 14-16 minutes or until golden brown.

Let cool before serving.

Greetings everyone!

If there is one thing I love, it is snacking. That’s why I thought I’d do a little series on snacks here on the blog. I don’t know how frequent it’ll be or what kind of snacks I’ll be doing, but for today I’m sharing with you one of my favourite things lately. Get ready for the amazingness that is edible raw cookie dough.

What you’ll need:

  • ½ cup packed brown sugar (can be substituted with regular sugar)
  • 2 TBSP butter, softened
  • 1/8 tsp vanilla
  • 1 and ½ TBSP milk
  • 1/3 cup flour
  • Pinch of salt
  • Whatever add-ins you like: chocolate chips, M&Ms, nuts, etc.

Step 1: Cream together softened butter and sugar.

Step 2: Add in flour, vanilla extract, milk, salt and flour

Step 3: Mix it all together

Step 4: If you want to add something in (I recommend chocolate, oreos or kitkat)

Step 5: I recommend refridgerating it for a while because it makes it firmer and less runny. 


And that is it! It is that simple, and then you’ve got yourself an absolutely delicious treat! Speaking off… I have some more waiting for me in the fridge, and now I really want some.
